  • 1 cup split peas
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion, carrots, celery, and garlic to the pot. Sauté until the vegetables are tender.
  3. Add split peas, cooked turkey bacon, chicken ham, broth, thyme, pepper, and bay leaf to the pot.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour, or until peas are soft.
  5. Remove bay leaf and use an immersion blender for a creamy texture, if desired.
  6. Serve hot with bread.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • This soup tastes even better the next day!
