- 1 cup split peas
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 bay leaf
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add onion, carrots, celery, and garlic to the pot. Sauté until the vegetables are tender.
- Add split peas, cooked turkey bacon, chicken ham, broth, thyme, pepper, and bay leaf to the pot.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour, or until peas are soft.
- Remove bay leaf and use an immersion blender for a creamy texture, if desired.
- Serve hot with bread.
Notes
- For a vegetarian version, omit turkey bacon and use vegetable broth.
