- 3 pounds beef roast
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Preheat oven to 325°F (165°C).
- In a large pan, heat olive oil over medium heat. Sear the beef roast on all sides until browned.
- Remove the roast and set aside. In the same pan, add onions and garlic, sautéing until translucent.
- Stir in the cranberry sauce, balsamic vinegar, salt, pepper, thyme, and rosemary.
- Return the roast to the pan, cover, and place in the oven.
- Braise for 3 hours, or until the beef is tender.
- Remove from oven and let rest for 10 minutes before slicing.
