A delicious and flavorful way to prepare beef roast, featuring a rich cranberry balsamic glaze.

  • 3 pounds beef roast
  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon rosemary

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a large pan, heat olive oil over medium heat. Sear the beef roast on all sides until browned.
  3. Remove the roast and set aside. In the same pan, add onions and garlic, sautéing until translucent.
  4. Stir in the cranberry sauce, balsamic vinegar, salt, pepper, thyme, and rosemary.
  5. Return the roast to the pan, cover, and place in the oven.
  6. Braise for 3 hours, or until the beef is tender.
  7. Remove from oven and let rest for 10 minutes before slicing.

Notes

  • For added flavor, marinate the roast overnight.
  • Serve with mashed potatoes or roasted vegetables.
