  • 1 medium pumpkin
  • 200 grams feta cheese
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Cut the pumpkin in half and remove the seeds.
  3. Place the pumpkin halves cut side up on a baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Bake in the preheated oven for about 30-40 minutes, or until tender.
  6. Once cooked, crumble feta cheese over the top and drizzle with honey.
  7. Return to the oven for an additional 5-10 minutes to warm the feta.
  8. Garnish with chopped rosemary before serving.
