  • 1 cup pumpkin puree
  • 2 cups heavy cream
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, combine the pumpkin puree, heavy cream, sugar, and spices. Heat gently until warm.
  3. Whisk the egg yolks in a separate bowl. Gradually add a bit of the warm cream mixture to the yolks, whisking constantly to temper.
  4. Pour the yolk mixture back into the saucepan with the cream and stir until combined.
  5. Transfer the mixture into ramekins and place them into a baking dish.
  6. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake for 30-35 minutes or until set. Let cool before serving.
