A delicious and nostalgic dessert that combines the sweet flavors of strawberries with the tartness of rhubarb, topped with a golden crisp.

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and cinnamon. Mix well and set aside.
  3. In another bowl, mix rolled oats, flour, brown sugar, and melted butter until crumbly.
  4. Spread the fruit mixture in a baking dish and top with the oat mixture.
  5. Bake for 35-40 minutes or until the top is golden brown and the fruit is bubbling.
  6. Remove from the oven and let cool for a few minutes before serving.
