1 medium spaghetti squash
2 cups cooked chicken, shredded
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/4 cup fresh parsley, chopped
Instructions
Preheat the oven to 400°F (200°C).
Cut the spaghetti squash in half and remove the seeds.
Drizzle the inside of the squash with olive oil, salt, and pepper.
Place the squash halves cut side down on a baking sheet and roast for 30-40 minutes.
While the squash is roasting, heat olive oil in a pan over medium heat and sauté garlic until fragrant.
Add the shredded chicken to the pan with garlic and cook for 5-7 minutes.
Remove the squash from the oven, scrape out the strands with a fork and mix with the chicken and parsley.
Serve warm and enjoy!
Notes
For added flavor, you can include grated parmesan cheese before serving.
This dish can also be topped with crushed nuts for added crunch.
