  • 1 cup rice vermicelli noodles
  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup red bell pepper, thinly sliced
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1/2 cup lettuce leaves
  • 1/4 cup peanut sauce for dipping

Instructions

  1. Soak the rice vermicelli noodles in hot water for about 5 minutes or until soft. Drain and set aside.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it becomes pliable.
  3. Place the softened wrapper on a clean surface and layer a small amount of noodles, carrots, cucumber, bell pepper, mint, cilantro, and lettuce.
  4. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top to enclose the filling.
  5. Repeat with the remaining wrappers and filling.
  6. Serve the fresh spring rolls with peanut sauce for dipping.

Notes

  • For an added kick, include sliced jalapeños with the fresh herbs.
