- 1 cup rice vermicelli noodles
- 8 rice paper wrappers
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup red bell pepper, thinly sliced
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1/2 cup lettuce leaves
- 1/4 cup peanut sauce for dipping
- Soak the rice vermicelli noodles in hot water for about 5 minutes or until soft. Drain and set aside.
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it becomes pliable.
- Place the softened wrapper on a clean surface and layer a small amount of noodles, carrots, cucumber, bell pepper, mint, cilantro, and lettuce.
- Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top to enclose the filling.
- Repeat with the remaining wrappers and filling.
- Serve the fresh spring rolls with peanut sauce for dipping.
