  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (15 ounces) crushed tomatoes
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach, fresh
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add onions and garlic, cooking until softened.
  3. Stir in the broth, crushed tomatoes, and Italian seasoning; bring to a boil.
  4. Add the broken lasagna noodles and let simmer until tender.
  5. Stir in ricotta, mozzarella, and Parmesan cheeses until melted and combined.
  6. Add fresh spinach and cook until wilted. Season with salt and pepper.
