A quick and easy chickpea salad sandwich recipe that everyone will love, perfect for lunch or a light meal.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/4 cup pickles, diced
  • Salt and pepper to taste
  • 4 slices whole grain bread

Instructions

  1. In a mixing bowl, mash the chickpeas with a fork until slightly chunky.
  2. Add mayonnaise, Dijon mustard, lemon juice, celery, red onion, and pickles. Stir until well combined.
  3. Season with salt and pepper to taste.
  4. Spread the chickpea salad on two slices of bread, top with remaining slices, and serve.

Notes
