- 1 medium head of cauliflower, chopped
- 4 slices turkey bacon, chopped
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 1 tablespoon fresh parsley, chopped
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss the cauliflower with olive oil, salt, and pepper. Roast for 25-30 minutes until golden brown.
- In a pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté the onion and garlic until translucent.
- Add the roasted cauliflower and vegetable broth. Bring to a boil, then simmer for 10 minutes.
- Blend the soup until smooth, then stir in the heavy cream and nutmeg.
- Serve hot, garnished with crispy turkey bacon and parsley.
