This creamy roasted cauliflower soup is an indulgence in every bowl, featuring the delightful crunch of turkey bacon.

Ingredients

  • 1 medium head of cauliflower, chopped
  • 4 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the cauliflower with olive oil, salt, and pepper. Roast for 25-30 minutes until golden brown.
  3. In a pot, cook the turkey bacon until crispy. Remove and set aside.
  4. In the same pot, sauté the onion and garlic until translucent.
  5. Add the roasted cauliflower and vegetable broth. Bring to a boil, then simmer for 10 minutes.
  6. Blend the soup until smooth, then stir in the heavy cream and nutmeg.
  7. Serve hot, garnished with crispy turkey bacon and parsley.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Add more vegetable broth for a thinner consistency.
