Ingredients

  • 2 tablespoons olive oil
  • 1 large onion
  • 4 cloves garlic
  • 1 tablespoon fresh ginger
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 pound turkey bacon
  • 2 cups carrots
  • 1 cup celery

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until fragrant.
  3. Stir in the chopped cabbage, carrots, and celery; cook for 5 minutes.
  4. Add chicken broth and diced tomatoes; bring to a boil.
  5. Season with salt and black pepper; reduce heat and simmer for 30 minutes.
  6. Meanwhile, cook turkey bacon until crispy; chop and set aside.
  7. Serve soup hot, garnished with turkey bacon.
