- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup tortilla strips
- In a large pot, heat olive oil over medium heat. Add the diced onion, bell pepper, and garlic and sauté until onions are translucent.
- Stir in chili powder and cumin, cooking for another minute.
- Add the chicken broth, shredded chicken, black beans, corn, and diced tomatoes to the pot.
- Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with tortilla strips.
