  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup tortilla strips

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, bell pepper, and garlic and sauté until onions are translucent.
  2. Stir in chili powder and cumin, cooking for another minute.
  3. Add the chicken broth, shredded chicken, black beans, corn, and diced tomatoes to the pot.
  4. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with tortilla strips.

Notes

  • For added flavor, top with avocado, cilantro, or cheese.
  • This soup can easily be made vegetarian by omitting the chicken and using vegetable broth.
