Ingredients

  • 4 fillets salmon
  • 1 cup pomegranate juice
  • 1/2 cup honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup pomegranate seeds
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a saucepan, combine pomegranate juice, honey, balsamic vinegar, Dijon mustard, salt, and black pepper. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 15 minutes, or until the glaze thickens.
  3. Preheat the oven to 375°F (190°C).
  4. Place the salmon fillets on a baking sheet and brush with the glaze.
  5. Bake for 20 minutes or until salmon flakes easily with a fork.
  6. Remove from oven and sprinkle with pomegranate seeds and parsley before serving.

Notes

  • For additional flavor, marinate the salmon in the glaze for 30 minutes before baking.
