A delicious and simple recipe for baked chicken chimichangas that will satisfy any craving.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup cheese, shredded
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 flour tortillas
  • 1/4 cup enchilada sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the chicken, cheese, beans, chili powder, cumin, garlic powder, and onion powder.
  3. Place a generous amount of the filling onto each tortilla, roll them up, and place seam-side down on a baking sheet.
  4. Drizzle enchilada sauce over the top of the chimichangas.
  5. Bake for 20-25 minutes or until golden brown.

Notes

  • For extra flavor, add diced jalapeños to the filling.
  • These can be prepared ahead of time and refrigerated before baking.
