- 2 cups cooked shredded chicken
- 1 cup cheese, shredded
- 1 cup black beans, drained and rinsed
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 8 flour tortillas
- 1/4 cup enchilada sauce
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the chicken, cheese, beans, chili powder, cumin, garlic powder, and onion powder.
- Place a generous amount of the filling onto each tortilla, roll them up, and place seam-side down on a baking sheet.
- Drizzle enchilada sauce over the top of the chimichangas.
- Bake for 20-25 minutes or until golden brown.
Notes
