Caramelized Onion Pasta with Chilli Oil

A deliciously rich pasta dish enhanced with the flavor of caramelized onions and a kick of chilli oil.

Ingredients

  • 1 pound pasta of choice
  • 2 large onions, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons chilli oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add the sliced onions and salt, sauté until they turn golden brown and caramelized, about 20 minutes.
  3. Meanwhile, cook the pasta according to package instructions until al dente.
  4. Once pasta is cooked, reserve a cup of pasta water and drain the rest.
  5. Add the caramelized onions to the drained pasta, along with the black pepper and reserved pasta water to create a sauce.
  6. Drizzle with chilli oil and toss to combine.
  7. Serve hot, topped with grated Parmesan and fresh parsley.

Notes

  • For extra spice, add more chilli oil to taste.
  • Try using different kinds of cheese for variation.
