- 1 pound pasta of choice
- 2 large onions, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons chilli oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- In a large pan, heat olive oil over medium heat.
- Add the sliced onions and salt, sauté until they turn golden brown and caramelized, about 20 minutes.
- Meanwhile, cook the pasta according to package instructions until al dente.
- Once pasta is cooked, reserve a cup of pasta water and drain the rest.
- Add the caramelized onions to the drained pasta, along with the black pepper and reserved pasta water to create a sauce.
- Drizzle with chilli oil and toss to combine.
- Serve hot, topped with grated Parmesan and fresh parsley.
Notes
- For extra spice, add more chilli oil to taste.
