2 pounds beef chuck roast
1 tablespoon olive oil
1 onion, chopped
4 garlic cloves, minced
2 dried guajillo peppers, stems removed
2 dried ancho peppers, stems removed
1 teaspoon cumin
1 teaspoon oregano
1 bay leaf
4 cups beef broth
12 corn tortillas
1 cup cilantro, chopped
1 lime, cut into wedges
Instructions
In a large pot, heat the olive oil over medium heat.
Add the onion and garlic, sautéing until fragrant.
Add the beef chuck roast and brown on all sides.
Blend the guajillo and ancho peppers with broth until smooth.
Pour the pepper mixture over the beef, add the cumin, oregano, bay leaf, and remaining broth.
Simmer for 2-3 hours until the meat is tender.
Remove the meat, shred it, and return it to the broth.
Heat tortillas on a griddle and fill with meat.
Garnish with cilantro and serve with lime wedges.

For extra flavor, allow the meat to marinate overnight.
