A delectable beef enchilada casserole that brings a savory twist to traditional comfort food.

  • 1 pound ground beef
  • 2 cups enchilada sauce
  • 3 cups corn tortillas, cut into strips
  • 2 cups shredded cheese
  • 1 cup black beans, drained and rinsed
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with diced onions until fully cooked.
  3. Add garlic powder, cumin, chili powder, and salt, stirring well.
  4. In a baking dish, layer half of the beef mixture, followed by half of the tortillas, half of the black beans, and half of the enchilada sauce.
  5. Sprinkle half of the cheese over the layers.
  6. Repeat the layers with the remaining ingredients.
  7. Bake for 25-30 minutes, until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.
